Not just visually stunning, this salad features barley, a powerhouse of fiber, vitamins, and minerals to every delicious bite. With the added bonus of a quick & easy preparation, this vegetarian dish will have heads turning and tummies happily satisfied in no time.   


Ingredients
4 cups
mixed greens, finely chopped
2 cans (14 oz/398 ml)
lentils
1 cup
cooked pearl or pot barley
1 12 cups
diced apple, peach, plum, or grapes
12 cup
crumbled feta
14 cup
pickled red onion, finely chopped
13 cup
toasted nuts, your choice, chopped

Toppings (optional): Garlic & Onion Nutritional Yeast Topper

Preparation
  1. In a large bowl, combine greens, lentils, barley, apple, feta, and onion.
  2. Pour dressing over the salad and toss to combine
  3. Just before serving, top with nuts and topper, if desired.
